Observatorio El Cafetal is an agroecological coffee farm located in the rural area of El Salado, Envigado, one of the few places where visitors can experience the rich coffee-growing traditions that once shaped the mountains surrounding Medellín. Your journey begins at 5:30 AM, as your private chauffeur and expert specialist guide arrive at your hotel. As the city of Medellín sleeps, you will enjoy a comfortable 30-minute drive to the Observatorio el Cafetal.

The morning is dedicated to the birds. We embark on a gentle birding trail (Difficulty easy-moderate) along the farms prestablish trail. This region is a biological treasure; while over 150 species call this farm home, the shifting seasons may allow you to spot up to 50 to 80 distinct species. In the afternoon, we transition from "Birding" to "Coffeeing" with a 2 to-3-hour deep dive into the soul of the bean:

5:30 AM – Hotel pick up and transfer to the farm
6:00 AM – Welcome and Introduction
Guests arrive at Observatorio El Cafetal and are welcomed by their local guide. After a brief introduction to the property and its diverse ecosystems, participants receive an overview of the day's activities and birding checklist.
6:30 AM – 11:00 AM: Guided Birdwatching Experience
Begin the day with a four-hour guided birding walk through the trails, forest patches, coffee plantations, and observation points of Observatorio El Cafetal.
The property provides excellent habitat for a wide variety of resident and migratory bird species. Along the route, participants will have opportunities to observe colorful tanagers, hummingbirds, woodpeckers, flycatchers, raptors, and many other species that inhabit the Andean foothills.
Experienced birding guides will assist guests in identifying birds by sight and sound while sharing information about their behavior, ecology, and conservation.
The tour includes several stops at strategic observation points, providing excellent opportunities for photography and birdwatching.
12:00 PM – 1:00 PM: Free Time and Relaxation
After the morning birding session, guests can relax and enjoy the peaceful surroundings of the observatory before beginning the coffee experience.
1:00 PM – 4:00 PM: Immersive Coffee Tour Experience
In the afternoon, visitors embark on a comprehensive journey through every stage of coffee production, gaining firsthand experience of the process that transforms a coffee seed into a freshly brewed cup.
Coffee Cultivation
Learn about the coffee plant's life cycle, including seed selection, germination, nursery management, planting, and cultivation techniques.
Coffee Harvesting
Discover how coffee cherries are selected and harvested. Depending on the season, participants may have the opportunity to pick ripe cherries directly from the coffee plants.
Coffee Processing
Observe and participate in the different stages of processing, including depulping, fermentation, washing, and drying. Learn how each step influences the quality and flavor of the final product.
Coffee Roasting
Experience the art and science of roasting coffee beans. Guests will learn how different roasting profiles affect aroma, body, acidity, and flavor characteristics.
Brewing and Tasting
Conclude the experience with a guided coffee tasting session. Participants will explore the sensory attributes of specialty coffee and learn different brewing methods while enjoying a freshly prepared cup.
By the end of the tour, visitors will have experienced every major step involved in the production of coffee, from the seed planted in the soil to the beverage served in the cup.
